We recommend that you season the chicken the day before cooking it and leave it to marinate in the refrigerator. You will obtain an exquisite result since the chicken will be much tastier.
Ingredients for the barbecue sauce (300 g):
1 medium onion
2 tablespoons brown sugar
1 tablespoon of sweet paprika
1 tablespoon mustard
2 tablespoons of honey
2 tablespoons ketchup
200 gr of tomato sauce (better if it is homemade) or crushed natural tomato.
1 tablespoon soy sauce
4 tablespoons vinegar
1 tablespoon of olive oil.
Ground black pepper and salt.
for Preparing the barbecue sauce for the chicken
We wash and chop the onion. In a non-stick frying pan with the olive oil and with the heat over medium heat, add the onion and a little salt and let it cook until it is soft and transparent, without getting brown-
When the onion is practically done, add the sugar and stir well for a couple of minutes so that the onion finishes caramelizing completely.
Next, add the tomato sauce and stir well, let it cook together for another couple of minutes. Add the rest of the ingredients: sweet (or spicy) paprika, mustard, honey, ketchup, soy sauce, vinegar, ground black pepper to taste and Tabasco (optional, only if you want to give it a spicy touch) .
Let everything cook over low heat for 5 minutes, stirring from time to time and trying not to stick. Taste the sauce to rectify its flavor and make it to your liking.
Ingredients for chicken with homemade barbecue sauce (4 people):
1 ½ kg chicken
Ground black pepper
Virgin olive oil
Salt to taste

We wash and marinate the chicken before putting it on the grill.
Set the heat to medium and grill the chicken skin side up so that it cooks well on the inside, but without drying out the outside.
When the meat is done (about 30 or 35 minutes) turn the chicken so that the skin is facing down this time. Cook it until the skin is golden brown
To know if the chicken is ready, prick the chicken with a knife trying to reach the bone. If when you take out the knife it is wet with a pink hue, the chicken is not ready yet. We must wait a little longer.
If the knife comes out wet, but with a transparent color, it is because the chicken is just right, ready to eat.
If, on the contrary, the knife comes out dry … it means that we have overcooked it. But it’s too late, watch out for next time. It is better to try from time to time than to leave it for a long time
